TRAINING FOR PROFESSIONALS
Dates: 9 – 12 November 2026, 09:00 – 15:00
Duration: 24 hours, 4 days
Price: 1,800 EUR
Through lectures, recipes and hands-on workshops led by certified chefs of the ŠKMER Culinary Academy, participants work through the essence of high Mediterranean cuisine. The programme covers exclusive recipes, work with costly ingredients and precise techniques drawn from tradition and from modern French gastronomy, shaped in the style of Alain Ducasse. On completion participants receive the Master of Culinary Arts certificate.
Over four days participants work through more than 20 multi-component recipes and ways of serving them, covering fish, meat, vegetable and sweet dishes, along with game, internationally known specialities and spices. Each recipe combines traditional and modern techniques that make the work in the kitchen easier and still deliver the effect the guest remembers.
Alongside the precision of French cooking, participants also cook modern Dalmatian marenda dishes, so that a demanding guest in a private villa can be shown the range and the authenticity of local Dalmatian food heritage. Bread gets particular attention, as does the daily preparation of one exceptional dessert.
The programme builds on the Split École Ducasse masterclasses and on Mediterranean Culinary Arts, the most comprehensive training run by the Association of Chefs from Mediterranean and European Regions. It has trained a good number of the chefs who now lead kitchens across the region.
The price covers the training, all ingredients and materials, coffee breaks with water and juice, and tastings of selected wines with the dishes.
