Objective and Contents of Program the program aims to provide the highest level of theoretical and practical knowledge of current trends in the contemporary culinary field as well as traditions of the extremely important and basic Mediterranean cuisine. Also the program includes advanced culinary methods and techniques and elements of Haute cuisine.

The Program is designed for experienced chefs (at least 3 years of proven practical experience) who want to improve their professional level and/or get new career prospects.

Upon completion of the program graduates receive a Diploma from SKMER Culinary Academy..

During 2 weeks, chefs will attend 5 Mediterranean modules:

  1. COLD AND HOT APPETIZERS
  2. FISH AND MEAT
  3. CREATIVE AND TRADITIONAL COOKING
  4. GLUTEN FREE AND ASIAN CUISINE
  5. RESTAURANT DESERTS

CONTENT:
   -shells, crustaceans, cephalopods
   -white and blue fish, sea game
   -meat: cuts, steaks, slow preparation method
   -truffles
   -foie gras
   -risotto
   -handmade pasta, fillings and dressing
   -fillings and dressing
   -sauces
   -creative side dishes
   -bread and buns
   -amuse-bouche
   -salty ice creams
   -savory tarts
   -restaurant desserts: sweet monoportions & plating

5 days per week, 8 hours per day

Duration: 2 weeks

Chefs would learn about Mediterranean cuisine, Mediterranean ingredients and traditional recipes.

Fee for training program:  2.125 EUR (16.010,81 HRK) 

Mediterranean Culinary Arts Program is held in Split – major capital of Dalmatia, Croatia – on the beautiful and very inspiring Croatian Adriatic coast.

 Groups of 6 to 12 chefs.
