ŠKMER Academy organizes a special program called PASTRY Chef Academy in six two-day modules (Fridays and Saturdays) for everyone who enjoys preparing desserts. It is a comprehensive program for cooking lovers, those who want to become professional confectioners and for chefs who want to upgrade their existing knowledge in the field of confectionery. This education provides knowledge and skills for the preparation of modern and traditional desserts in restaurants and for catering forms. They learn to prepare sweet leavened and drawn doughs, tarts, mousses, terrines, semifredda, petit fours, pralines, cakes, mono portions, biscuits, sweet and candied fruit, creams, sauces for desserts, decorations, as well as serving and attractive ways of presentation. . Part of the program is the preparation of desserts for different diets (sugar and gluten free, raw and different veggie variants – from flexiterianism to veganism…)

The course lasts 62weeks, 10 working days, and is held on Fridays from 15 to 21:00 in the ŠKMER Culinary Academy, Jobova 2, Split.

Group size: 6 – 8 participants
Price: 1.060 EUR (7.986,57 HRK) per student

The amount includes detailed recipes and instructions, equipment, groceries and work materials, certificate, and the possibility of continuing education in the retraining program for the profession of confectioner
Method of payment: 20% as a booking confirmation, the remaining amount until the end of the program with the possibility of installment payment for members.
