SPLIT GOURMET EXPO 2019: Gastro exhibition of the restaurant on the Riva ended with the victory of Brasserie on 7

Split Gourmet Expo – an exhibition of Split restaurants, taverns and hotels was held for the third time, organized by the Chefs of the Mediterranean and European regions and in cooperation with the Tourist Board of the city of Split on Sunday on the Split waterfront. Among the seven top restaurants, the winner was Brasseria on 7, a new facility that delighted the jury consisting of Hrvoje Zirojević, Marija Lulić, Antun Nišević and Goran Staničić. An exhibition table was set up on the Riva, and each of the participants’ exhibits exhibited three sequences (cold appetizer, main course and dessert) which presented the top of their offer. Also performing were the Park Hotel, the Da Mar restaurant of the Marvie Health Hotel, Diocletian’s Wine House, Portofino, the Bajamont trattoria and the Dujkin dvor tavern. The winning team of Brasserie on 7 presented themselves with goose liver terrine for an appetizer for which they won gold, roasted tuna with quinoa and a verde salsa, and for dessert they served lemon tart. They won based on the total number of points, and the jury scored the taste, appearance and originality of the dish at the event. Let’s add that the restaurant will be the ambassador of the Split gastro scene next year.

In the main course category, Portofino, a restaurant where Marko Đurašević cooks, one of the most innovative chefs in Split with a long career in Spain, where he gained experience in restaurants crowned with Michelin stars, excelled. Đurašević and his team won gold for the best dish, and it was pasticada made from Adriatic Kali tuna. There was a tuna belly with a fermented garlic emulsion, crispy kale, almonds and hazelnuts, beef sauce and extra virgin olive oil.

At the Split Gourmet Expo, Diocletian’s Wine House was declared the best dessert, and it was an original dessert “Split cannelloni made of figs, filled with almond cream and Vis lemons”.

“I was fascinated that everything was better for the scale than last year, it’s amazing how much effort the teams put in to improve their offer and show on the Riva what sets them apart from others. The return of our chefs from abroad or from the kitchens of ships where they gained new experiences that they have transferred to today has contributed a lot to that, specialist master and lecturer at culinary academies.

On the Riva, after the jury tasted the delicacies, the citizens and tourists were given the opportunity to taste them. Everything was eaten in a few minutes, followed by the award ceremony.

“Today, it is really the caterers who have recognized the importance of going out to the competition table with their best dishes on the Riva – the main city promenade and the living room of the city. They used the best ingredients, extremely demanding techniques and the most attractive ways of serving to show how beautiful, attractive and inspiring the gastro scene of gastro Split can be. In addition, the participants exchanged recipes and experiences that they have nowhere else to go, except at such events “- added Alma Harašić Bremec from the Chefs of the Mediterranean and European regions.
