This intensive training is built for professional chefs on yachts and tourist boats, for F&B managers, owners and vocational teachers of cooking and service. It covers menus that bring together complex dishes with their side dishes, sauces and plating. It also covers cooking for guests with particular dietary requirements, gluten free or vegetarian among them, writing menus, and the detail of sourcing.
The programme brings together organisation, costing standards, ordering, ways of serving, set menu and buffet service, with the emphasis on running costs and on respecting the ingredients. It is adapted to each participant according to their business needs and their starting level.
